From a young age, Eileen had a passion for everything food. She also has a sense of pride and understanding of what family and good food means. Born in Maine, and raised in Massachusetts Eileen learned early on how food brought the family together.

“My passion really started when I began living on my own and started cooking at home for myself.”

After graduating with a degree in Economics from the University of Massachusetts, Eileen spent 26 years in healthcare sales. Years of traveling domestic and abroad exposed Eileen to a multitude of fascinating cuisines.

In 1989, she moved to New York City to further her marketing career. It was there where her passion for cooking exploded from the abundance of world-class restaurants and culinary influences.

“I realized throwing a dinner party was a great way to get friends to visit, when I told people I was cooking, they all came over! As I improved my craft, my passion grew and I realized that I had a knack for cooking and pairing foods. Family and friends started telling me that I should cook for a living.”

She enrolled at Peter Kump’s Cooking School in Manhattan and there learned the basics of French cooking. Eventually, Eileen turned her passion into her career path, and started Too Busy to Cook. Eileen describes her cooking as simple, home-style comfort cooking, and emphasizes the importance of using local, seasonal ingredients whenever possible, from the land and from the sea!
